Here’s a classic North Indian Rajma recipe — a hearty, flavorful curry made with red kidney beans simmered in a spiced onion-tomato gravy. Best served with rice (Rajma Chawal) or roti.

🧾 Ingredients

For Rajma:

1 cup rajma (red kidney beans)

3 cups water (for pressure cooking)

Salt – to taste

1/4 tsp turmeric powder


For Gravy:

2 tbsp oil or ghee

1 tsp cumin seeds

1 bay leaf (tej patta)

1 large onion – finely chopped

1 tbsp ginger-garlic paste

2 large tomatoes – pureed or finely chopped

1–2 green chilies – slit or chopped (optional)


Spices:

1/2 tsp turmeric powder

1 tsp coriander powder

1 tsp cumin powder

1 tsp garam masala

1 tsp red chili powder (adjust to taste)

1 tsp kasuri methi (optional)


Garnish:

Fresh coriander leaves – chopped

1 tbsp butter or cream (optional, for richness)

🔪 Preparation Steps

1. Soak and Cook Rajma:

Rinse and soak rajma in water for 8–10 hours or overnight.

Drain and rinse again.

Pressure cook with 3 cups water, salt, and turmeric for 15–20 minutes (or 6–7 whistles) until soft.

Beans should mash easily when pressed.


2. Make the Gravy:

Heat oil or ghee in a pan. Add cumin seeds and bay leaf.

Add chopped onions and sauté until golden brown.

Add ginger-garlic paste and cook until raw smell disappears.

Add tomato puree and cook until oil separates.


3. Add Spices:

Add turmeric, coriander, cumin powder, red chili powder, and salt (if needed).

Sauté for 1–2 minutes.


4. Add Cooked Rajma:

Add cooked rajma along with its water.

Simmer on low heat for 20–25 minutes, mashing a few beans to thicken the gravy.

Add garam masala and crushed kasuri methi toward the end.


5. Final Touch:

Stir in chopped coriander and butter or cream if using.

Jeera rice

Roti or paratha

💡 Tips:

The longer it simmers, the better the flavor.

You can also use canned rajma — just rinse and skip the pressure cooking.
