Instructions

1. Prepare the Dough:

Mix flour and salt. Add water gradually and knead into a soft, smooth dough.

Rest the dough for 20–30 minutes, covered.

2. Make the Paneer Filling:

In a bowl, mix grated paneer with green chilies, ginger, coriander, and spices.

Mix gently so paneer stays soft and crumbly.

3. Stuff and Roll the Parathas:

Divide dough into 6 balls and roll each into a 4–5 inch disc.

Place 2–3 tbsp paneer stuffing in the center.

Fold edges over the filling, pinch to seal, and flatten.

Roll gently into a 6–7 inch round. Use dry flour if needed to prevent sticking.

4. Cook the Parathas:

Heat a tawa or skillet over medium-high heat.

Place the rolled paratha on the hot tawa.

Flip after 30–40 seconds or when you see bubbles.

Apply ghee/oil on both sides and cook until golden brown with crisp spots.

Press edges gently with a spatula for even cooking.

5. Serve Hot:

Serve with curd (yogurt), butter, pickle, or mint chutney.
