Here's a simple and delicious Poha (Flattened Rice) Recipe — a popular Indian breakfast dish:

1 cup poha (flattened rice, medium or thick variety)
1 small onion, finely chopped
1 small potato, peeled and diced (optional)
1–2 green chilies, finely chopped
1/4 tsp mustard seeds
1/4 tsp turmeric powder
1/2 tsp sugar (optional, for slight sweetness)
Salt to taste
1–2 tbsp oil
8–10 curry leaves (optional but recommended)
2 tbsp roasted peanuts
Juice of 1/2 lemon
Fresh coriander leaves, chopped (for garnish)

Instructions
1. Rinse Poha:
Put poha in a colander and rinse it under running water for 30–40 seconds.
Gently fluff it with your fingers while rinsing to ensure it's evenly moist but not soggy.
Let it sit and drain for 5–10 minutes. Add salt and turmeric, and mix lightly.
2. Cook the Potatoes (Optional):
Heat 1 tbsp oil in a pan. Add diced potatoes and cook until golden and tender. Remove and set aside.
3. Temper the Spices:
In the same pan, add a little more oil if needed.
Add mustard seeds. Once they splutter, add curry leaves, green chilies, and peanuts. Fry for 1 minute.
Add chopped onions and sauté until soft and translucent.
4. Mix Poha:
Add the drained poha and cooked potatoes to the pan.
Mix gently to combine all ingredients well.
Add sugar (optional) and adjust salt if needed.
Cook on low heat for 2–3 minutes. Cover for 1–2 minutes to let flavors blend.
5. Finish:
Turn off heat. Squeeze lemon juice and mix.
Garnish with fresh coriander leaves.
