1 tsp chili sauce or green chili sauce
2½ cups water or veg stock
1 tsp cornflour + 2 tbsp water (cornflour slurry)
Salt – to taste
1/4 tsp black or white pepper
Spring onion greens – for garnish
For Fried Noodles (Topping):
1/2 cup cooked noodles
Oil for deep-frying

Fried Noodles (Optional but classic):
1. Boil noodles until just done. Rinse under cold water and drain.
2. Pat dry with a towel. Heat oil and deep-fry a small batch until crisp.

1. Sauté Aromatics:
Heat 1 tbsp oil in a pan or wok.
Add chopped garlic, ginger, and green chili. Sauté for 30 seconds.
