Here’s a classic and flavorful Chole (Chana Masala) recipe — a North Indian chickpea curry that's hearty, spicy, and perfect with rice, bhature, or roti.

🍛 Chole / Chana Masala Recipe

Serves: 3–4 | Prep + Cook Time: ~45 mins (excluding soaking time)

🧾 Ingredients

For Boiling Chickpeas:

1 cup dried chickpeas (soaked overnight) or 2 cups canned chickpeas

3 cups water

1 black tea bag (optional, for color)

1/2 tsp salt

1 bay leaf


For Gravy:

2 tbsp oil or ghee

1 tsp cumin seeds

1 bay leaf

1 onion – finely chopped

1–2 green chilies – chopped (optional)

1 tbsp ginger-garlic paste

2 tomatoes – pureed or finely chopped

1/4 tsp turmeric powder

1 tsp coriander powder

1/2 tsp cumin powder

1 tsp red chili powder (adjust to taste)

1 to 1.5 tsp chole masala or garam masala

Salt – to taste

Fresh coriander – for garnish

🥣 Optional Add-ins:

1/2 tsp amchur (dry mango powder) or lemon juice – for tanginess

A pinch of kasuri methi (dry fenugreek leaves) – crushed

🍳 Instructions

1. Boil Chickpeas:

Soak chickpeas overnight. Drain and rinse.

Pressure cook with 3 cups water, salt, bay leaf, and tea bag (if using) for 6–7 whistles or until soft. Discard tea bag.

If using canned chickpeas, drain and rinse. Skip pressure cooking.


2. Make the Masala:

Heat oil or ghee in a pan.

Add cumin seeds and bay leaf. Let them sizzle.

Add chopped onions. Sauté until golden brown.

Add green chilies and ginger-garlic paste. Cook for 1–2 minutes until raw smell goes.

Add pureed or chopped tomatoes and cook until oil separates.


3. Spice It Up:

Add turmeric, coriander powder, cumin powder, red chili powder, and salt.

Cook the masala for a couple of minutes.


4. Combine & Simmer:

Add boiled chickpeas along with some of their water.

Add chole masala and stir well.

Simmer uncovered for 15–20 minutes, mash a few chickpeas to thicken gravy.


5. Final Touch:

Add amchur or lemon juice if needed for tang.

Add kasuri methi if using.

Garnish with chopped coriander.
